Still Deciding What To Make With All Those Great Summer Veggies From The Farmer's Market

Look No Further. Tasty, Quick, & Healthy Sanwhich

1 Small Zucchini Thinly Sliced
1 Small Yellow Squash, Thinly Sliced
1 Medium Yellow Onion Thinly Sliced
1/3 cup sliced cremini mushrooms (baby portobellas)
1/2 Red Bell Pepper
Olive Oil NonStick cooking Spray
Sea Salt
Fresh Ground Black Pepper
4 Whole Wheat Baby Pitas
4 Teaspoons Homemade Balsamic Italian Dressing
3/4 Cup Freshly Grated Importated Pecorini Romano Cheese or Mozzrella

Preheat Oven to 450. Spray Baking Sheet.  Place veggies on the baking sheet and spray once more to coat the veggies. Bake for 10 minutes, or untl tender. Season with the Sea Salt & Freshly Ground Black Pepper.

Arrange Veggies on pitas; drizzle with dressing and top with cheese.

Place pitas on the unheated rack of a broiler pan. Broil 4 inches from heat for about 3 minutes, or until cheese has melted. Serve Immediately!
