Chicken with White Whine & Cranberries

1 1/2 Pounds Boneless & Skinless Chicken Tenders
Sea Salt
Black Peppercorns & Pepper Grinder
Trader Joe's Almond Meal
EVOO For Frying Pan
1 large minced shallot
1 Cup Low Sodium Organic Chicken Broth or 
1/4 White Wine (Drinking Wine Not Cooking Wine)
1 TBSP Cornstarch Dissolved in 1 TBSP Water
Sea Salt & Pepper To Taste
1 Cup Frozen Cranberries ( Thaw Before Cooking) (Never Use Fresh For This)

Season tenders with sea salt & freshly ground black pepper, then coat lightly with almond meal. Heat 2-3 TBSP EVOO in frying Pan and cook chicken over medium heat until cooked completely. Set Aside & Keep Warm.

Drain all fat from pan except for  1 TBSP. Saute shallots in oil over medium heat or low heat until tender. Add broth & wine. Cook 4-5 Minutes more. Add in cornstarch mixture to your pan & cook for another 2-3 minutes. Add tiny amounts of sea salt & fresh ground pepper. Add in thawed cranberries and cook for 2-3 minutes. Pour sauce over chicken & enjoy.


Remember Low Sodium is Always 400MG or Less. Anything over this while lower in sodium is not LOW SODIUM.
