Save Your Sanity With Papaya & Pineapple Muffins

1 1/2 cup oat flour or Brown Rice Flour
2 tsp Baking Powder
2 tsp cinnamon
1 tbsp Bob's Red Mill Ground Flaxseed
1/2 cup crushed canned pineapple, drained
1 cup cubed papaya
1/2 cup chobani greek vanilla yogurt
1 Orgran No Egg or 1 Egg White
4 oz Organic Natural Unsweetened Applesauce
1/4 cup Splenda
1 tbsp Agave syrup
1/4 cup Blue Diamond Cinnamon Brown Sugar Almonds crushed
1/2 cup dried blueberry or strawberry flavored cranberries

Preheat Oven To 375

In a large bowl whisk flour, baking powder, flaxseed, and cinnamon

Puree pineapple, papaya, and yogurt in food processor or blender. Mix in egg product, Splenda, & agave.

Combine pineapple and flour mixture, fold in almonds & cranberries

Spoon batter into muffin pan pre-sprayed with olive oil spray. Bake for 20-25 Minutes.
