Great Snack For Watching Sports or Anytime FOR Snacking

1 lb Boneless Chicken Breasts Cubed
or You Can Buy Already Cut Up Grilled Chicken And Dice It
1 Large Spanish Onion Chopped
1 tbsp Roasted Garlic Gloves
1 Small Yellow Pepper Chopped
1 Small Red Pepper Chopped
2 Cups Chi-Chis Mild Fiesta Salsa
1 Pkg Trader Joe's Frozen Fire Roasted Corn or other brand that is Fire Roasted
Thaw And Drain the Frozen Corn
12 (6 Inch) Whole Wheat Tortillas
1 Cup Oikos or Chobani Plain Greek Yogurt
1 1/2 Cups Chihuahua Cheese or Combine Monteray Jack & Mild Cheddar & Shred

Heat Oven to 400

In large Nonstick Skillet Sprayed With Olive Oil cook chicken, peppers, onions, & garlic 10-12 minutes or until chicken is done. Add in salsa & corn.

Place 6 tortillas on the bottom of a pre-sprayed 13x9 baking dish. spoon 1/2 of the cooked chicken mixture over tortillas and spread, add yogurt, add cheese, Repeat layers. cover with foil

Bake for 30 Minutes, remove foil, cook 5 minutes, remove and let hang out for another 5 minutes, then serve.
