Apple High Protein Muffins

1 1/2 cup Organic Oatmeal
1/2 cup Heart healthy Vanilla Soymilk
3/4 cup Bob's Red Mill Oatmeal Flour
1 scoop (2 Heaping Tbsp) Biochem Brand Original Flavor Whey Protein Powder
2 tsp Aluminum Free baking powder
1/2 tsp baking soda
2 tsp cinnamon
14 dates, finely chopped (3/4 cup) you can buy them already diced or chopped
1 Orgran No Egg or 1 Egg
1 4oz Container Natural Organic Unsweetened Applesauce
2 tbsp Splenda for Baking or 2 tbsp Agave Syrup 
1/2 cup prune puree  
(Find This in Baby Food Aisle) 2 Pkgs Gerber 1st Food Prunes 2.5oz are what you need.

Preheat Oven to 400
Combine oatmeal and milk in a bowl and let soak. In a seprate large bowl, mix flour, whey protein, baking powder, baking soda, cinnamon & dates.

In another bowl, combine egg, applesauce, splenda, and prune puree.  Now add all this to oatmeal mixture, thin gradually stir in flour mixture.

Spoon batter into your Flour Sprayed Muffin Pans. Bake for 20 minutes or until dry on the inside.
