Leftover Creole Coconut Potatoes Used For 3 Soups In Vitamix

Store leftover potatoes for 2-3 days in the refrigerator

You Will Need 1 Vitamix or Something Similar
1 1/2  - 2 Cups of Coconut Milk
6 Ounces Cooked Spinach
Leftover Creole Coconut Potatoes Equaling 4 Potatoes

Add in Milk, then Spinach, then Potatoes
Blend for 4-5 Minutes

Potatoes Waiting for Liquids












Ready to Blend

Omit Spinach for Plain Creole Potato Soup












Another Variation Is to Add Leftover Rotisserie Chicken With Your Left Over Creole Coconut Potatoes & Spinach to Blend For Soup

Spray Skillet
Pour In Enough Egg Whites To Cover Skillet
Let Egg Whites Set
Sprinkle Pepper & Garlic Granules
Add in Spinach
Top With Onions & Pepper
Top With Leftover Creole Coconut Potatoes
Grate Some Imported Pecorino Romano Cheese On Top

1 Extra Large Baking Sheet With Edges Lined With Tinfoil Sprayed With Fat Free Cooking Spray
2 Casserole Dishes For The Potatoes Sprayed With Non Cooking Spray

Pre-Heat Oven To 400
Empty Wet Items in One Bowl & Mix
Empty Dry Items Into One Bowl & Mix
Pour Dry Items Into Square Container or Pan
Pour Wet Items Into Square Container or Pan
Coat Chicken in Flour & Breadcrumb Mixture, Then Coat In Milk & Egg Mixture, Place In Baking Sheet

Bake Chicken Until Internal Temp is 165 Degrees (Depends On Your Oven 30-55 Minutes)

Baked Whole Wheat Rotini With Kale Gravy & Chicken Italian Sausage

Step 1
Prepare My Kale Gravy Using This Recipe Link Below:

After Kale Gravy Is Done, Remove From Stove & Set Aside

Step II
Cook 16 Ounces of Isernio's Ground Chicken Italian Sausage Or Other Brand & Set Aside

Step III
Prepare a 13 or 14.5 Oz Box of Whole Wheat Rotini With A Pasta Cooker in Microwave or On Stove
Drain Well &; Set Aside

Step IV
Add 1-2 TBSP of Extra Virgin Olive Oil To A Large Deep Casserole Dish
Add Pasta
Sprinkle Frontier Garlic Granules Over Pasta
Add In An Additional 12.5 oz Can of Petite Diced Tomatoes No Salt Added
Add Cooked Sausage
Add Kale Gravy
Optional to Add In Some Stuffed Sliced Garlic Olives
Top With Freshly Shredded Imported Pecorino Romano Cheese
Bake In 400 Oven Just Long To Melt The Cheese


This is the only way to get ground chicken Italian sausage where I live in Illinois.

1 Bunch of Fresh Kale

1 Salad Spinner or Colander & Lots of Paper Towels
1 Cutting Board, 1 Knife
1 Bowl
1 Skillet

1/8 TSP Sea Salt
Pinch of Ground Black Pepper
1-2 TBSP Extra Virgin Olive Oil or Canola Oil



1/4 -1/2 Cup Diced Onion
8-10 Sliced Grape Tomatoes

2 TBSP Minced Garlic
Fresh Grated Imported Pecorino Romano Cheese


Clean Kale With All Natural Veggie Wash With Organic Citrus or Use Other Produce Cleaner
Place Kale In Salad Spinner & Spin Dry, Then Dry Some Completely With Paper Towels
Heat Oil In Skillet On Medium
Add Onion, Tomatoes, Kale, & Garlic And Cook Until Kale is Just Wilted And Onions Turn Opaque.
Serve Fresh Grated Cheese Over Kale Gravy Once Your Ready To Top Your Pasta With Your Kale Gravy

Fresh Minced Rosemary (Optional)
Finely Grated Imported Pecorino Romano Cheese (Optional)
Ground Cinnamon  (Optional)
Cocoa Powder  (Optional)
Minced Garlic (Optional)
Stutfed Garlic Olives (Crumbled)

There are many ways to make Kale Chips and there are many toppings you can choose, I have listed a few to get you started on how you might like them. Experiment with these or try your own topping, or eat them basic style which is the recipe listed below.

Cut stems from Kale Bunch
Remove All Leaves From Kale And Clean In Sink With a Produce Cleaning Spray
Place All Kale Leaves in Salad Spinner, Spin, Drain & Dry Completely
Place Leaves On Cutting Board & Cut in Even Pieces
Line Your Extra Large Pans With Parchment Paper
Put Kale In Bowl And Massage In Oil & Sea Salt
Spread Kale Pieces All Across Pan With Spacing
DON'T OVERLAP KALE AS IT WILL STEAM & NOT GET CRISP LIKE A CHIP
Bake at 300 For 18-21 Minutes On Lower Rack
Remove From Oven And Top With One of The Choices Above or Eat Plain

Applesauce Corn Muffins

1 1/4 Cup Whole Grain Flour
3/4 Cup Corn Meal
1/2 Cup Natural Raw Wheat Germ
1/4 Cup Splenda
2 TSP Aluminum Free Baking Powder
2 -3 Egg Whites
1-2 TBSP Melted Smart Balance Butter Blend Stick Made With Olive Oil
4 Oz Unsweetened Applesauce
Mixing Bowl
Non Stick Flour Spray
12 Count Muffin Pan

Preheat Oven To 400
Spray Muffin Pan
Combine All Dry Items in Mixing Bowl
Add in All Wet Items
Mix Until Just Moistened

Bake 400 20-25 Minutes

Decaf Vanilla Soy Chai Latte At Home

Last Winter in 2010 I thought I had found My Quickest & Most Inexpensive Way To Make a Soy Chai Latte At Home.

Fast Forward To The Late Summer of 2011 And I Have Changed My Mind, While Buying The Concentrate Already Prepared Is Quick, I No longer consider this to be the most economical way to enjoy one of my favorite beverages at home. The first drawback is that the price of the concentrate has increased quite a bit,  the second is that with the concentrate the amount of caffeine is just way too strong for me. Since my TSH level has become so hyper I can't have any caffeine or chocolate at all. The third drawback to the concentrate is that it does not maintain the quality of the product. As a single person on a very strict fixed budget I can't consume a whole quart of chai latte before the product degrades to justify the expense.

My change is now to buy the Decaf Tea Bags in a Box and make one cup or two at a time and then steam my Soy Milk in My Frother. So far I have only found 3 brands of Decaf Chai. Celestial Seasonings which makes multiple varieties that include Decaf Sweet Coconut Chai, Mountain Chai Decaf, & Chai Original India Spice Decaf. I did not like any of there flavors due to bitterness. Bigelow has a Decaf Spiced Chai which is too strong and has a sharp residue. The 3rd brand I found which makes Decaf Chai is Tazo and this I love plain or with Vanilla Soymilk or Unsweetened Soy Milk And Splenda.

Boil Water For 2 Bags of Tea
Add 2 Decaf Chai Tea Bags To Your Large Glass
Let Steep for 5-7 Minutes
Remove Tea Bags And Splenda or Sweetener of Your Choice

Using a Keurig Frother or Hand Frother Make Cappuccino Foam With Vanilla or Unsweetened Soymilk
Add Foam To Your Tea
Sprinkle Ground Cinnamon Over Foam
Grate Fresh Nutmeg Over Cinnamon
Relax With a Wonderful Glass of Decaf Vanilla Soy Chai Tea Latte At Home
Add Ice if You Want It Cold Or Drink Some & Then Put In The Refrigerator For Later
I Like to Have This & Then Meditate or After Yoga or at night as a desert


Tazo has added the ingredients of Roobios, ginger, black pepper, & chicory that are not found in other brands I have tried. They have also admitted allspice which to me is a good thing.  This makes for the best taste as is or with my Soy Milk.

Traditional Indian Chai Tea from scratch is made with 6 cups of whole milk, star anise, whole cloves, 2-3 cinnamon sticks, 7 white peppercorns, 2 TBSP of Ceylon black Tea which not decaf,  a cardamom pod and tons of sugar. That is a lot of chai for one person and a lot of work to cook items in 3 separate pots,

Adapted From Gardein's Basic Recipe

1 Package Gardein Chick'n Scallopini
Whole Grain Flour To Cover Each Frozen Scallopini
1 TBSP Roasted Garlic Oil
1 TBSP Sesame Oil
1 TBSP Minced Garlic
1 TBSP Sesame Seeds
1 TBSP Capers
1 TBSP Lemon Juice
2 TBSP Rice Wine Vinegar
1 Bowl
1 Skillet

Heat Oils On Medium in Skillet
Place Frozen Scallopini Into Flour In Bowl & Cover Each Side
Place Coated Scallopini & Cook For a Few Minutes On Each Side


This is so Quick & Easy To Prepare















Cooking
















Eat As Is or Serve In a Salad Or On Top of Tofu Spaghetti or Regular Multi-Grain Pasta. Topped With Freshly Grates Pecorino Romano Cheese.




Tomato Garlic Tofu Spaghetti

1 8 Ounce Package Tofu Shirataki Spaghetti Shaped Noodle Substitute
1 TSP Roasted Garlic Oil
1 TSP Garlic Granules
6 Ounces Diced Tomatoes Fresh or Half a Can No Salt Added Diced Tomatoes
2-3 Sprays Smart Balance Spray

Prepare Tofu Spaghetti as Directed
Add Oil To Plate
Add Noodles To Plate
Sprinkle Garlic Granules on Noodle
Add Tomatoes
Spray Butter Balance Spray
Optional to Add Freshly Grated or Pre-Grated Imported Pecorino Romano Cheese On Top


Find this in the produce section at your grocer usually by the soy cheese or vegan meat substitutes.













Make sure to triple rinse it, microwave for 2-3 minutes and pat totally dry.

This is Already Grated At The Local Italian Produce Store. This time I used the whole cheese and grated it.

Freshly Grated or Pre-Grated Imported Pecorino Romano Cheese On Top.

Tomato Garlic Olive Sauce For Piccolini Fusilli

1 Box of Barilla Piccolini Fusilli (Prepare How You Like)
1 Saucepan
1 TBSP Roasted Garlic Oil
14.5 Oz Can Petite Diced Tomatoes No Salted Added or Fresh
2 TBSP Amore Tomato Paste
1 TBSP Minced Garlic
2 TBSP Sun Dried Tomatoes
1 TBSP Onion Powder
1 TBSP Garlic Powder
1 TBSP Oregano
1 TBSP Lighthouse Italian Seasoning
1 TSP Fennel Seeds
1 4 Oz. Can Minced Black Olives
Optional To Add In Some Cooked Ground Chicken Italian Sausage

Heat Oil In Saucepan on Medium Heat
Add in All Ingredients & Mix
Cook for 20-30 Minutes on Low Heat
Pour Over Fusilli
Add Freshly Grated Imported Pecorino Romano Cheese Over Sauce

Pineapple Turkey Chili

5 Quart Dutch Oven With Cover
2 TBSP Roasted Garlic Oil
1 Pound Ground Turkey (93/7 Lean)
2 TBSP Frank's Red Hot Sweet Chili Sauce
1 TBSP Frontier Salt Free Chili Powder or other Salt Free Brand
 2TBSP Ancho Chili Powder
1 TBSP Onion Powder
1 TBSP Ground Cumin
1 TBSP Ground Cinnamon
1 TBSP Unsweetened Natural Cocoa Powder
1 TSP Jane's Crazy Mixed Up Original Sweet Lime Pepper Marinade & Seasoning
15 Oz. Can Petite Diced Tomatoes No Salt Added or Fresh
1 TBSP Minced Garlic
16 Oz. Frozen Pineapple Chunks
15 Oz. Can Eden Organic Lundberg Brown Rice & Pinto Beans


Heat Oil In Dutch Oven on Medium Heat
Add Ground Turkey
Add The Rest of The Items In The Order Listed Above & Mix
Reduce Heat To Low, Cover And Cook for 1 Hour or More To Allow Flavors To Set

Quick & Easy Sweet Potato Fries

Normally I try to buy very few processed & packaged products but sometimes when I am not feeling well or want to be prepared when I am not, I will make an exception and search for the healthiest packaged item I can find. My local Super Target had Oreida's New Sweet Potato Fries in the Freezer at a great sale price and I had a Coupon so I decided to break down and buy a package. I put the whole package on a jellyroll pan lined with tin foil sprayed with some fat free cooking spray. Once the potatoes were done I sprinkled some ground cinnamon on top and then 2 sprays of smart balance spray for my individual serving. If I served them to someone else they would never know that they were store bought. For me they have more sodium then I would like but for those of you not concerned about your sodium levels they will be fine for you.
