Game Day Stuffed Mushroom Caps

18 Large Portobella Mushrooms
3 tbsp finely minced celery
1 tbsp Smart Balance Butter Blend Stick
1/2 cup finely cored, peeled, chopped gala or fuji apples 
2 tbsp Trader Joe's Ground Almond Meal Breadcrumbs
2 tbsp finely chopped almonds
1 tbsp fresh crumbled pecorino romano cheese
1 tbsp Spice Hunter California Parsley Leaves
2 tsp Freshly Squeezed Lemon Juice or Santa Cruz Organic Lemon Juice

Remove stem from mushroom caps and save caps. Finely dice stems, save 1/3 cup. Cook chopped mushroom stems and minced celery in large skillet with your Smart Balance Butter Blend. Let Hang out for a bit to cool. Remove from pan and pour into stainless steel bowl and mix with your apples, almond breadcrumbs, cheese, parsley & lemon juice.

Place your mushroom caps on a baking sheet sprayed with Olive Oil Spray. Spoon your mixture into your mushroom caps.

Bake 375 for 15-20 Minutes
