Sweet & Spicy Baked Chicken Wings

Normally I always make everything with boneless skinless chicken breasts but the twin-pack of fresh natural chicken wings where on-sale, & there was a $3 of coupon on the pack and I had a store coupon. So the 12 wings cost $1.00. Wings definitely are super high on the fat scale but since I have not cooked wings in years & I have no re-gained my weight it was a nice treat to have some.

1 Box Panko Bread Crumbs
3 Bowls or Containers
Non Stick Cooking Spray
1 TSP Canola Oil
3 Quart Oval Casserole Dish

Put Flour In One Bowl
Chili Sauce In Another
Panko in 3rd Bowl

Preheat Oven to 400 or 415 Degrees
Dip Each Wing In Flour, Then In Chili Sauce, Then In Panko
Place Wing Onto Pre-Spayed Casserole Dish

Heat Dutch Oven on Medium
Add Oil
Add Peppers, Onions, Garlic, Capers, & Tomatoes & Saute
Add All Fresh & Dried Spices & Stir
Add Okra, Spinach & Fresh Greens
Saute Till Greens Are Slightly Wilted

1 Skillet Pan
Cornmeal For Breading
1 Package Frozen Gardein Chick'n Scallopini
1 TBSP Sesame or Roasted Garlic Oil
1 TBSP Capers
1 TBSP Minced Garlic

Coat Top & Bottom of All 4 Frozen Gardein Chick'n Scallopini's with Cornmeal
Heat Oil In Skillet

Cook Gardein Till Done 4-5 Minutes Per Side

Garlic Collard Green Saute

Growing up I never heard of Collard Greens, Black Eyed Peas, or Ham-hocks probably because I lived in the Midwestern State of Illinois and being Jewish you are not supposed to eat anything made from Pork ever. It was not until watching an episode of Oprah many years ago that I learned about all these foods being an old time meal of the Southern States. With my renewed quest to get back to eating a 75-90% vegan diet, I am buying greens, beans, & legumes that I have never eaten and cooking them with my own healthy twist.

One of My New Fall Favorite Vegetables is Collard Greens

1 Bunch Collard Greens Chopped
10 Sliced Grape Tomatoes
1 Diced Onion
2 TBSP Minced Garlic
2 Mini Diced Yellow Bell Peppers
2 Mini Diced Red Bell Peppers
2 Mini Diced Orange Bell Peppers
8 Oz Diced Mushrooms
4 Oz Frozen Cut Okra Steamed in Microwave
1/8 TSP Sea Salt
Extra Virgin Olive Oil
1 Bowl
1 Large Deep Skillet

Rinse Collard Greens With Veggie Produce Wash, Drain & Dry
Put Collard Greens in Bowl & Toss With 1 TSP Oil & 1/8 TSP Sea Salt

Heat 1 TBSP Extra Virgin Olive Oil in Skillet On Medium Heat
Add In Collard Greens And Saute For 3 Minutes
Add In Onions, Garlic, Peppers, Tomatoes, Mushrooms, & Continue Sauteing
Add in Okra And Cook For Until Veggies Are Just Tender

Empty Pasta into Pasta N More Container, Add Water to Level 8, 1/8 TSP Sea Salt

Add Sauteed Vegetables Over Pasta
Add Steamed Broccoli
Add Tomatoes
Mix & Serve As Is or Topped With Some Fresh Grated Pecorino Romano, Daiya, or Soy Cheese

Wonderful Place For Local Wines

Galena Cellers has a location in Downtown Geneva, IL which is set up like a bar, this allows you to go up to the bar and ask for a sample to taste the wines before you buy one. They have a cooler with chilled wines and then shelves with non-chilled wines as well as wine buying club which allows you to save on the case price for wines. One of my favorite fruits is peaches so I purchased a peach wine that I can use for baking & Savory recipes.

Last weekend was a rare 80+ Degree day here in the Fox Valley Area of Illinois so  I decided to walk around downtown Geneva on 3rd Street where most of the cute shops & restaurants are located. Being on a fixed income & budget does not allow me to buy something at each store I walk into like many other people do who shop on this street. I allow myself one time a year to buy a package of prepared Gourmet Popcorn. It is a combo of Carmel & Cheese Popcorn which lasts me about 2-3 weeks as I only eat a tiny amount and do not eat it all in one sitting as most people do. The popcorn is much better then Garrett's in Chicago.

Preheat Oven To 400 Degrees

Add All Dry Items to Bowl
Add All Wet Items to Bowl & Mix
Use Ice Cream Scoop to Put Batter Evenly Into 12 Count Muffin Pan

Bake 25-45 Minutes

3/4 -1 Cup Coconut Milk or other Non -Dairy Milk

All Purpose Whole Wheat Buttermilk Pancake Recipe With Fruit of Your Choice

1 Mixing Bowl
1 Whisk
Papertowels And Plates
1 Electric Skillet or Skillet for Stove Top
1 Cup Buttermilk
1 Cup Whole Wheat Flour (Maybe a Little More As I use Applesauce in Place of Oil)
1 TSP Baking Powder
1 TSP Cream of Tartar
1 TSP Ground Cinnamon
1 TSP Vanilla Extract
1/2 TSP Baking Soda
1/8 TSP Sea Salt
1 Egg, or 1 Egg White or 1 Orgran No Egg Natural Egg Replacer
1 Cup Water
1/4 Cup Applesauce
Add Your Fruit of Choice (Canned Pumpkin, Prune Puree, Mashed Banana, Pureed Mango, Blueberry etc).

Add Dry Items To Bowl
Add Wet Items to Bowl & Whisk
If using Skillet on Stove, Heat Oil Till it Bubbles
Drop in Pancakes, Cook And Flip When One Side Bubbles,
Remove And Place on Papertowels to Absorb Oil
No Need for ANY Syrup When Making Pancakes With Fruit
I used an Electric Skillet to Eliminate All The Extra Fat From Cooking With Oil in Every Batch


One batch with Banana And Another With Pumpkin
Freeze The Extra For 2-3 Months

1 Package Diced Celery Including Leaves
12-16 Ounce Diced Carrots

1 TSP Onion Powder
1 Cup Diced Orange & Bell Peppers
16 Ounces Ground Chicken Italian Sausage
8 Cups Very Low Sodium Chicken Broth

Empty Broth Into Crock Pot
Add Ground Sausage You Do Not Have To Brown Sausage 1st, But You Can if You Prefer
Add Peppers, Carrots, Celery, Onions,Tomatoes, Then Spices
Cook On Low 10-12 Hours



Ready To Cook

Chimichurri Marinade for Chicken, Steak, Fish or Pasta

1 Cup Fresh Flat Leaf Parsley Finely Chopped
4 Gloves Garlic Minced
2 TBSP Fresh Finely Chopped Oregano ( Can Sub Dried)
1/4 - 1/2 Cup Extra Virgin Olive Oil

Add Dressing to Bowl
Add Apples

Chill For a 4 Hours And Serve

Non Stick Flour Spray
1 Bread Loaf Pan

1/2 Cup to 1 Cup Coconut Milk Depending on How Many Slices Want to Make
Orgran No Egg Natural Egg Replacer Powder Follow Pkg Directions for Equivalence to 2 Egg Whites
1 TBSP Ground Cinnamon
1 or 2 Very Ripe Bananas Depending on Size
6-8 Slices of Whole Wheat or Multi-Grain Bread
Non Stick Cooking Spray
1 Skillet

Heat Skillet on Low Heat

Add Banana/s Into Bowl And Mash
Add Cinnamon, Add Organ No Egg Powder and Water
Pour Milk into Bowl
Whisk everything till blended
Add 1 Piece of Bread To Mixture And Soak Both Sides
Place Bread on Heated Skillet And Cook 1-2 Minutes Each Side
You Could use Applesauce, Pureed Pumpkins or Pureed Mangos in Place of Banana

1 Orange Bell Pepper Diced

1 TBSP Minced Garlic
1/4 Cup Diced Tomatoes
2 Egg Whites
2 TBSP Tomato Paste
1/2 TSP Black Ground Pepper
1 TBSP Ground Rosemary
1 TSP Ground Thyme
1 TBSP Very Low Sodium Soy Sauce
Mixing Bowl
Nonstick Cooking Spray

Preheat Oven To 425 Degrees

I Do Not Drink Soda I bought this to use in marinades
and sautes and it worked wonderful paired with some rice vinegar and also mixed with the mustard BBQ sauce for other recipes. I still have plenty left for some more meals.

One of the Best Vegetarian Burgers

For the last 30 yrs I have switched between being a Vegan, to Vegetarian, To Ovo-Vegetarian, To Ovo-Lacto-Vegetarian, To Vegetarian, To A Flexatarian ( Eat Mostly Vegetarian). I have tried many Vegetarian & Vegan burgers during this time.

Dr. Pragers Has 110 Calories, 5 Grams of Fat, 5 Grams of Protein, 4 Grams of Fiber, 1 Gram of Sugar &  250 Grams of Sodium. Dr. Praeger's is made with all vegetables. Taste Great Microwaved & Topped With a Piece of Dairy Free Cheese or With Some Humus. These are not available at my local Super Target so I no longer purchase them and have had to find a substitute.
