My Delish Oatbran Applesauce Muffins

1/2 cup Splenda Brown Sugar Blend Packed
1/2 Cup Organic Oat Bran Cereal
1/2 Cup Splenda For Baking Sugar Blend
1 1/2 Cups Bob's Red Mill Brown Rice Flour or White Rice Flour
2 tsp. Argo Aluminum Free Baking Powder 
1/2 tsp Sea Salt 
2 eggs or 3 egg whites or 2 tsp Orgran Gluten Free No Egg Natural Egg Replacer
1 Cup Organic Natural Style Applesauce Chilled No Sugar Added
4 tbsp EVOO or Equal amounts Applesauce or prune puree

Preheat Oven to 400
Line 12 muffin cups with dye free muffin cups or spray Olive oil spray in muffin cups.  
In a Mixing Bowl blend together dry ingredients. 
Add eggs, chilled applesauce, & Extra Virgin Olive oil. 
Mix until well blended. 
Spoon batter in muffin cups 3/4 full. 
Let stand for 10 minutes in muffin cups. 
Bake 15-25 Minutes or until golden brown. 
Test by sticking a toothpick or fork tine into center of muffin for doneness. 

Now you have made 12 of my delicious Oat Bran Applesauce Muffins. 
You Can Freeze Them in Bags of Two And Thaw Them for later Enjoyment!
Perfect For On the Go Breakfast, Morning or Afternoon Snack, Post Workout With Some Chocolate Milk
