1/2 15 Oz Can Black Beans, Tripple Rinsed & Drained or Dried
1/2 medium cucumber, peeled and diced (1 Cup)
1/4 Cup Finely Chopped Onion
1 Cup (4 Ounces) Soy Mozzarella Cheese, Chopped Fine (about 1/4 inch Cubes)
You should sub Grated Imported Pecorino Romano (Which is made with Sheep;s Milk)
3-4 TBSP Chopped Fresh Cilantro
1 TBSP Santa Cruz Organic Lime Juice or Fresh Squeezed
Combine all ingredients in a medium bowl & toss gently yet thoroughly to blend. Cover with plastic wrap & let stand 1 Hour to absorb flavors.
Serve with 12 Soft Corn Tortillas, cut into 6 wedges each Low Carb Whole Wheat ones.
Bake 350 For 8 minutes and Cool Totally.
