Grilled Chicken Roasted Pepper Guacamole Wrap

With the high cost of Avocados and Bell Peppers it just makes more sense lately to buy this already to use.
This is super quick as everything just comes out of the package or jar, placed on the tortilla and ready in minutes.

2 Corn Tortillas Warmed
1 Slice of American or Cheddar Soy or Rice Cheese
3 Ounces Frozen Tyson Grilled Chicken Strips Cooked
1-2 Mezzetta Roasted Red Peppers Sliced or Make Your Own

I keep mine in the freezer and take down a package whenever I need some.

Place Tortilla on a Plate

One Skillet
One Steelhead Trout Filet
1 TSP Canola Oil
1 TBSP Capers
1 TSP Minced Garlic
1 TSP Lime Juice
1 TSP Garlic Powder
American Stockyards Mustard BBQ Sauce

Heat Oil On Medium
Add in Fish, Capers, Garlic, Garlic Powder, Lime Juice
Cook time is based on thickness of filet
Top with BBQ Sauce

Mustard Steak

Hard to believe that the whole week has gone by and I still feel like I accomplished hardly anything other then reading some great books, recording shows & movies on my DVR, and registering for Free classes/presentations at my local library, Hospital, Wellness Center & Cancer Center. Still trying to catch up with all my recipes that I created while I was sick most of March. Most of my recipes were fairly quick & easy as I did not feel up to creating anything to complex for eating.

1 Broiler Tray
1 Mock Tender Chuck Steak Cut Into Cubes
1 Diced Onion Sauteed or Grilled
Canola Oil
Sea Salt
Oregano
Garlic Powder

Season steak with Sea Salt, Garlic Powder, & Oregano and let rest for 30 minutes
Saute Onions in Canola Oil while steak is resting, & set aside
Turn Broiler On
Add Steak to Tray
Cook to desired doneness
Top with grilled onions & Mustard Sauce

Bunless Burger Sliders

For some people being totally Vegan works and they have no problems with keeping there Vitamin D, Calcium, B12, Zinc, Iron, & Fatty Acid & other Vitamin Levels good but this has never been the case for me, even when I was a total Vegan in the 80s-90s. I prefer not to have to take supplements for everything because it is too expensive, there is a lot of issues with interference with my medications and of course there can be quality issues. I try to have some red meat 2 days a month so that I can keep my Iron & B12 levels where they need to be.

1 Package of Beef or Buffalo Burger Sliders
1/4 Cup Grilled Onion
Soy Cheese
Wholly Guacamole 100 Calorie Snack Size Package
Mustard or Mustard BBQ Sauce

Franks Red Hot Sweet Chili Sauce

Season All Burgers With a Mixture of 1/8 Sea Salt & Black Pepper
Grill or Broil Burgers to Your Desired Temperature
Saute Onions Till Soft in A Skillet With a Little Canola Oil
Serve Two Sliders On 2 Corn Tortillas, a lettuce wedge or plain in the plate
Spread guacamole on your tortillas or lettuce or your plate
Top With Cooked Onion, Cheese, mustard sauce & Franks sauce

1 Dutch Oven
1 TSP Canola Oil
16 Oz/ 1LB Pre-Cooked Polenta Cut Into Cubes
16 Oz Chopped Frozen Okra
12 Oz Frozen Mediterranean Vegetables
1/8 TSP Sea Salt
1/8 TSP Ground Black Pepper
1/2 Cup Diced Onion
1 TBSP Minced Garlic
1-2 TBSP Amore Tomato Paste

Heat Oil In Dutch Oven on Medium
Add in Onion, Okra, Mediterranean Veggies, Garlic, Salt, Pepper And Cook Until Just Tender
Add In Cornmeal And Saute for a Few Minutes
Add In Tomato Paste When Done, Mix & Serve

Okra Appetizer

This has been one super nasty sinus infection battle which has left me at home for a few weeks doing nothing but watching programs recorded on my DVR with my feet propped up on my Lazyboy couch, hardly eating, and not exercising. Finally after 10 days of antibiotics, 2 weeks of antifungals, daily RX nasal spray, daily netti-pot nasal lavage, saline spray, Debrox Ear Drops, cough drops, lots of tea and soup I am almost back to feeling normal. I have been making soup in my Vitamix with frozen veggies & Soy or Coconut milk, smoothies with frozen fruits, Kale and Soymilk. I have 8 recipe PIC's loaded on my PC and 12 still in my camera so it will take a little while to get these all typed up, then I have 14 pages of recipes that are hand-written to be typed up yet as well.

The day I started to feel sick I attended a presentation giving by a local Chiropractor on how she treats patients with Fibromyalgia which came with a Gluten Free Lunch. Last week I attended a presentation at one of the local hospital on Gut Feelings: Managing Digestive Orders, both of these renewed my commitment to  continuing to follow a Gluten, Dairy & Egg-Free life and reinforced my feelings on eating much less chicken, turkey, and red meat.

Now onto another recipe with one of my favorite vegetables "OKRA" and one of my favorite grains cornmeal which produces a great Polenta. In this case the Polenta is ready made and shelf stable which I purchased at Cost Plus World Market.

1 Dutch Oven
1 TSP Canola Oil
16 Oz/1LB Pre-Cooked Polenta Sliced Into Cubes
16 Oz Frozen Chopped Okra
1/8 TSP Sea Salt
1/8 TSP Ground Black Pepper
1 TBSP Minced Garlic
1/2 Cup Diced Onion
1 TBSP Amore Tomato Paste

Heat Oil On Medium High
Add In Onion, Okra, Garlic, Salt & Pepper
Cook Until Done
Add In Cornmeal And Saute For a Few Minutes
Add Tomato Paste When Done, Mix & Serve
