Turkey Meatloaf Muffins

1 Pound Extra Lean Ground Turkey or Ground Chicken
1/4 Cup Kidney Beans or Black Beans
1 Onion Diced
1 Orange Bell Pepper Diced
1 Yellow Bell Pepper Diced
1 TBSP Minced Garlic
1/4 Cup Diced Tomatoes
2 Egg Whites
2 TBSP Tomato Paste
1/2 TSP Black Ground Pepper
1 TBSP Ground Rosemary
1 TSP Ground Thyme
1 TBSP Very Low Sodium Soy Sauce
Mixing Bowl
Nonstick Cooking Spray
1 12 Cup Muffin Pan
1 Skillet

Preheat Oven To 425 Degrees
Spray Muffin Pan With Nonstick Cooking Spray And Set Aside

Saute Onion, Garlic & Bell Peppers Until Soft
Remove & Set Aside

Add Meat, Beans, Spices, Soy Sauce, Tomatoes, Tomato Paste & Egg Whites to bowl & Mix
Add cooked vegetables & Mix

Scoop into Muffin Pan with Ice Cream Scoop For Even Meatloaf Muffins

Bake for 25-40 Minutes

Ready to Bake
