Carob Oatmeal Pecan Muffins

1 1/4 Cup Quick Cooking Steel Cut Oats or Regular Quick Cooking Rolled Oats (NEVER QUAKER!)
1 1/4 Cup Bob's Red Mill Brown Rice Flour
1/4 Cup Ground Flaxseed
1 TSP Aluminum Free Baking Powder
1/2 TSP Cream of Tartar
1 TSP Ground Cinnamon
2 Egg Whites
12 OZ Yoplait or Chobani Plain Fat Free Greek Yogurt (NEVER FAGE)
2 4Oz Mussleman's Applesauce Sweetened with Splenda or Unsweetened Applesauce
1/4 Cup Splenda For Baking
1 TSP Ground Carob Powder
1/4 TSP Organic Agave Syrup
1/4 Cup Crushed Pecans 

Preheat Oven to 375

In Large Bowl Add Dry Ingredients, Then Wet and Mix with Large Stirring Spoon or Electric Mixer.

Spray 12 Cup Muffin Pan with Flour Spray or Olive Oil Spray, Fill 3/4 Full For Small or Full For 
Larger Muffins. 

Bake 25-45 Minutes Depending on Your Altitude

  2. Quaker Oats Has Publicly Acknowledged That They Are NOT Contaminant Free. Which Means That They Might Be Grown On Fields With Wheat, Rye, Barley, etc. Also there processing facility states that they might be processed with all types of other Allergen products, EX:(Nuts, Tree Nuts, Brazil Nuts, Peanuts, Dairy, Wheat, Barley, Rye, Chocolate, Citrus, Tomatoes, Fish, etc.

    Many people are sensitive to Gluten but they can eat Oats that are not contaminated with other Gluten products.

    As for the reason I do not use FAGE is because it is made from Raw Milk & Raw Cream which can be quite unhealthy and causes serious GI issues. In addition I do not like the texture, the taste of the plain is a word I can't write here. Also they do not have any probiotics which is a USDA requirement for yogurt here.

    In addition to Lactobacillus bulgaricus and Streptococcus thermophilus, which are required by USDA standards in producing yogurt, Chobani yogurt contains the probiotic cultures of Lactobacillus acidophilus, Bifidus and Lactobacillus casei. Probiotics are beneficial in replenishing the natural live bacteria living in our digestive tract.


    I stick with Chobani plain, Oikos or Yoplait plain. Dannon makes one but there products are not naural or organic and there manufacturing processes have beens sued before.
