Rachels All Purpose Muffin Recipe

1 ½ cups whole-wheat flour
or for low-carb use almond flour/meal ¼ to ¾ ratio of other flour
1 ½ cups unbleached white flour or for low-carb use soy flour
1 ½ cups oatmeal or oatbran or fat-free granola
½ cup wheatgerm or ground flaxseed
¼ cup raisins or unsalted sunflower seeds
¼ cup applesauce
½ cup honey
1 cup soy milk or rice milk or skim milk
2 eggs or egg whites
¼ teaspoon salt
½ teaspoon baking soda
¼ teaspoon cream of tartar
1 Teaspoon orange peel (optional)
½ cup orange juice (optional)
Mix together in bowl, if mixture too thick add more milk. Bake in 350-degree oven for 18-20 minutes in muffin pan using no stick cooking spray
