Okra Cornmeal Tomato And Mediterranean Vegetables

This goes along with my theme of being meat free as much as possible.

1 Dutch Oven
1 TSP Canola Oil
16 Oz/ 1LB Pre-Cooked Polenta Cut Into Cubes
16 Oz Chopped Frozen Okra
12 Oz Frozen Mediterranean Vegetables
1/8 TSP Sea Salt
1/8 TSP Ground Black Pepper
1/2 Cup Diced Onion
1 TBSP Minced Garlic
1-2 TBSP Amore Tomato Paste

Heat Oil In Dutch Oven on Medium
Add in Onion, Okra, Mediterranean Veggies, Garlic, Salt, Pepper And Cook Until Just Tender
Add In Cornmeal And Saute for a Few Minutes
Add In Tomato Paste When Done, Mix & Serve

Ready TO Serve
